Sharing my favorite recipe

Hello friends!  I was planning to make my favorite meal for supper today and thought to myself…This recipe is to good not to share.  A few years ago a friend of mine invited my husband and I to their place for dinner.  She made this dish called Chicken Quesadillas with fruit salsa.  Let me tell you……I think my mouth had an explosion of flavors!


This dish has everything to satisfy your tastebuds.  Its sweet, tangy, crispy, fruity and oh soooo yummy!  The fruit is marinated with tequila !  I got your attention now didn’t I?!  That is what gives this dish an added unique flavor.  Those of you that do not like alcohol can probably omit the tequila.  I have never had it that way, but Im sure it would be just as tasty.  So without any more rambling about this scrumptious meal, here is my recipe I would like to share with you.  Mind you, I am one of those that do not measure ingredients in most of my recipes that I have made so many times, but I will try to give you the closest measurements of it.



Here are all the ingredients for the fruit salsa.  Fresh strawberries, peaches, blueberries, cilantro, cantaloupe, red onion, lime and 1/4d cup or so of tequilla.

I used 1/2 cantaloupe chopped into small bite size pieces

1/4 of a red onion chopped fine.

About 1/4 cup or so of cilantro finely chopped

about 1 cup whole blueberries

3 peaches, skinned and chopped into bite size pieces

about 2 cups chopped strawberries

the juice of one lime

about 1/4 cup or so of tequilla

Gently mix all the ingredients well and let the fruit marinate for about 2 hours, stirring occasionally.  Next….

I used 5 chicken breasts

Crushed red pepper.  I probably used about a tablespoon.  Add less or more, depending on how hot and spicy you like it.

enough olive oil to cover a fry pan

one red onion sliced into large pieces

Add enough olive oil to fry pan and heat on medium heat, add chicken breasts and cook until done.  Once chicken is cooked I cut into strips or chucks and then add the red onion and continue to cook until onions are soft.  Turn off heat when done.



Next ingredients are….


Shredded sharp cheddar cheese

Place tortillas onto a greased baking pan and add a portion of the chicken mixture, add shredded cheese to your liking and fold the tortilla shell over.


Preheat oven to 425 degrees and bake until cheese is melted.  It usually takes about 10 minutes.  Take out of oven and slice each tortilla into halves.  Place onto plate and add the fruit salsa on top and add a dollop of sour cream and get ready to awaken those taste buds!
